The Fruit:
- 1 lb Fresh Strawberries medium size, washed and patted bone dry
Layer 1 (The Creamy Center):
- 1/2 cup White Chocolate Chips Recommended: Lily’s White Chocolate Style for sugar-free
- 1/2 tsp Coconut Oil Refined
Layer 2 (The Crispy Shell):
- 1/2 cup Dark Chocolate Chips Recommended: Hu Kitchen Gems or Ghirardelli 60%
- 1/2 tsp Coconut Oil Refined
Optional Boost:
- 1 scoop Collagen Peptides Unflavored, divided between chocolate bowls
Prep the Berries (Crucial Step): Wash your strawberries thoroughly. Pat them completely dry with paper towels. Note: If even a drop of water remains, the chocolate will seize.
The Initial Chill: Line a baking sheet with parchment paper. Place the dry strawberries on the sheet (not touching) and freeze for 20 minutes. You want them cold to the touch, but not frozen solid.
Melt White Layer: In a microwave-safe bowl, combine the White Chocolate Chips and 1/2 tsp Coconut Oil. Microwave in 20-second intervals, stirring in between until smooth and drippy. (Add half the collagen here if using).
The First Dip: Holding the strawberry by the stem (or a toothpick inserted into the top), dip it fully into the white chocolate. Shake off excess. Place back on the cold baking sheet.
Freeze Layer 1: Place the tray back in the freezer for 10-15 minutes. The white chocolate must be hard to the touch before the next step.
Melt Dark Layer: In a clean bowl, combine Dark Chocolate Chips and remaining 1/2 tsp Coconut Oil. Melt in 20-second intervals until smooth.
The Double Dip: Remove berries from the freezer. Quickly dip the white-coated berry into the dark chocolate, covering the white layer completely.
Final Hyper-Chill: Return to the parchment paper and freeze for at least 1 to 2 hours until frozen solid.
Serve: Remove from freezer and let sit for 1-2 minutes before eating for the perfect texture.
- Storage: Keep these in an airtight container or Ziploc bag in the freezer for up to 2 months. They do not store well in the fridge (they will get mushy).
- The "Seizing" Warning: I cannot stress this enough water is the enemy of melting chocolate. Ensure your bowl and spoon are completely dry before starting.
- Gluten-Free & Vegan: To make this 100% Vegan/Dairy-Free, ensure you use a dairy-free white chocolate brand (like Pascha) and vegan dark chocolate (like Hu Kitchen).
- High Protein Hack: If adding collagen, the chocolate mixture may thicken slightly. You can add an extra 1/4 tsp of coconut oil to thin it back out.
