Ingredients
  

For the pulled chicken

  • 1 ½ lb boneless chicken Breast
  • 1 ½ tsp onion, garlic, cumin,chilli, pepper and salt powder for each of them.
  • 1 tsp smoked paprika
  • Tbsp olive oiloil
  • 1 Tbsp honey sugar free Sweetener of your choice.
  • cup BBQ sauce
  • ¼ cup tomato sauce
  • 1 Tbsp lime juice

for the serving

  • 12 taco shells ( remember corn Tortilla or low calorie Tortilla)
  • cup cheese shredded
  • 2 cups lettuce
  • toppings suggested toppings listed above

Instructions
 

  • mix together all seasonings, the honey, lime juice, BBQ sauce and olive oil in a bowl to combine . Then your add your boneless chicken breast and turn it to coat it evenly.
  • Preheat your oven to 400°f (200°c) and spread the marinated chicken in a single layer on a baking sheet. Naw bake for 20 - 30 minutes.
  • when the chicken is been cooked through cover with aluminium foil.
  • on a pan add your BBQ sauce and tomato sauce mix well until combined and let is simmer.
  • lightly shred the chicken with two forks and then pour it into the pan with the sauce.
  • mix and allow it to simmer for atleast 3 minutes at low heat until the sauce thickens do make sure to taste and add salt and pepper if needed.
  • for the tacos your gonna give a light dab of the Tortilla on the bbq sauce

Assemble them

  • add the BBQ pulled chicken with the sauce in it
  • top with some of the varieties of the toppings fresh salsa, diced red onions, shredded lettuse and cheese.
  • heat the tacos on the pan with the left over bbq sauce for 2 minutes on both side on low heat for that lovely cheese pull and crisp
  • add some lettuce at the bottom of the tacos to prevprevent the shell from getting soggy fast

Notes

  • For extra flavor add a pinch of cayenne pepper yo the marinade.
  • If you love spicier tacos then use a spicier bbq sauce or add more pepper.
  • Let the chicken soak in the sauce it helps Absorb all the flavours properly.
  • Fell free to experiment with different low-calorie toppings suggested.
