Ingredients
  

  • 1 cup heavy whipping cream
  • ½ cup unsweetened almond milk (or unsweetened vanilla almond milk for extra flavour)
  • 3 large egg Yolks
  • 3 tbsp allulose or erythritol (low-carb sweetener)
  • 1 tsp vanilla extract
  • ½ tsp ground nutmeg
  • ¼ tsp ground cinnamon
  • ¼ tsp ground cloves
  • pinch of salt
  • ½ tsp rum extract (optional but gives that true eggnog flavour)
  • ½ scoop (about 15 g) vanilla whey protein powder (for creaminess + extra protein)

Topping

  • ½ cup whipped cream (unsweetened or lightly sweetened with allulose)
  • light sprinkle of ground cinnamon or nutmeg

Instructions
 

Make the base:

  • In a small saucepan, whisk together the almond milk, egg yolks, sweetener, vanilla, spices, and salt. Cook over medium-low heat, stirring constantly, until it thickens slightly and coats the back of a spoon (about 5–7 minutes). Do not boil.

Cool the mixture:

  • Remove from heat, stir in rum extract if using, and let it cool for 10 minutes. You can place the pan over an ice bath to speed cooling.

Whip the cream:

  • In a large bowl, beat the heavy cream until soft peaks form. Add the cooled eggnog base and the protein powder, then gently fold together until smooth and mousse-like.

Chill:

  • Spoon the mixture into serving glasses (like the tall one from your image) and refrigerate for at least 1 hour, or until firm.

Garnish and serve:

  • Top with whipped cream and a dusting of cinnamon or nutmeg before serving.
