For the Cookies:
- 1 cup almond flour (or oat flour for nut-free)

- ½ tsp baking soda

- ¼ cup melted coconut oil (or butter)
- ½ cup coconut sugar (or brown sugar)
- 1 large egg (or flax egg for vegan)
- 1 tsp vanilla extract
For the Ice Cream Filling:
- 2 cups vanilla Greek yogurt (or coconut yogurt for vegan)
- 1 scoop vanilla or chocolate protein powder (optional for high protein)
- ¼ cup maple syrup or monk fruit sweetener
- ½ tsp peppermint extract (adjust to taste)
- ½ cup dark chocolate chips (chopped)
- ½ cup crushed Oreos (or gluten-free chocolate cookies)
Make the Cookies
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, mix almond flour, cocoa powder, baking soda, and salt.
In another bowl, whisk melted coconut oil, sugar, egg, and vanilla.
Combine wet and dry ingredients into a thick dough.
Roll into 16-20 small balls, flatten into cookie shapes, and place on baking sheet.
Bake for 10-12 minutes, then let cool completely.
Make the Ice Cream Filling
In a mixing bowl, whisk together Greek yogurt, protein powder, maple syrup, and peppermint extract.
Fold in chocolate chips and crushed Oreos.
Assemble Sandwiches
Place a scoop of mint filling between two cookies.
Gently press together and smooth edges.
Optional: roll edges in extra crushed Oreos or mini chocolate chips.
Freeze & Serve
Place sandwiches on a tray lined with parchment.
Freeze for at least 4 hours until firm.
